WHIPPED RICOTTA CROSTINI

Bite sized crostini’s make for that special addition to any cocktail party. Recipe by @talulaskitchen

INGREDIENTS

½ large French baguette
15 ounces ricotta — 1 container
¼ cup honey
1 pack blackberries, sliced lengthwise or whole
A few sprigs of fresh thyme
Olive oil

DIRECTIONS

Crostini


1. Preheat your oven to 400°F (200°C).


2. Slice the baguette to your desired thickness and arrange the slices on a parchment-lined baking sheet.


3. Lightly drizzle front of bread with olive oil.


4. Bake for 12 minutes, until crisp and golden.


5. Transfer to a wire rack to cool

Whipped ricotta


1. While the bread is baking, combine the ricotta and ¼ cup honey in a blender or food processor.

2.Blend the mixture until smooth and creamy.


3. Transfer the mixture to a piping bag

Assembly


1. Once the toasts are cool, pipe your whipped ricotta onto each slice of toast.
2. Top with whole or sliced blackberries and sprinkle with fresh thyme leaves.
