STRAWBERRY SHORTCAKE STACK
Vibrant red strawberries, golden-brown shortcake, billowy white whipped cream make for the perfect dessert stack.
INGREDIENTS
For the Cake
2½ cups all-purpose flour, sifted
½ teaspoon salt
1¾ cups granulated sugar
3 teaspoons baking powder
½ cup vegetable oil
¾ cup milk
⅔ cup sour cream
1 teaspoon of Vanilla bean paste
2 large eggs
2 large egg whites
For the Filling
3 cups of diced fresh strawberries
2 tablespoons strawberry jam
For the Frosting
8 ounces cream cheese
¾ teaspoon vanilla bean paste
1 cup of powdered sugar
2¼ cups heavy whipping cream
DIRECTIONS
The Cake
Preheat your oven to 350°F.
2. In a medium bowl, whisk flour, baking powder, and salt until combined. Set aside.
3. Using a stand mixer fitted with the paddle attachment, beat sugar, oil, eggs, egg whites and vanilla paste until combined. Add the sour cream and beat until combined.
4. Add half of the flour mixture, beating until just combined.
5. While still beating, slowly add milk, then the remaining flour mixture. Be sure not to over-mix.
6. Line three 8-inch cake pans with parchment paper and grease the pans.
7. Evenly divide the batter between the three pans. Tap/gently drop the pans on the countertop a couple times to remove any air bubbles.
8. Bake for 20-22 minutes.
9. Place the pans on a rack to cool.
The Filling
Combine the strawberries and jam and set aside. This mixture will be used for the filling.
The Frosting
Place the cream cheese, powdered sugar, and vanilla bean paste in a large mixing bowl.
Using a stand mixer with a whisk attachment or your hand mixer, beat the mixture on low-medium speed until completely smooth.
While the mixer is still whipping, slowly pour the heavy cream.
Stop and scrape the bowl periodically.
Increase the speed to high for about 3-6 minutes until the cream can hold a stiff peak.
The Assembly
Place one layer of cake on your favorite plate.
Top with the strawberries mixture and pipe the heavy whipping cream.
Place another layer of cake on top and repeat.
Drizzle the strawberry over the top and let settle alongside the cake.
