Cosmo Jelly Cakes

Ingredients

1/2 cup vodka

1/2 cup hot water

1/4 cup Cointreau

1/3 cup lime or lemon juice

 1/2 cup cranberry cocktail juice 

2 pks unflavored gelatin

lime or lemon zest to garnish

Directions

1. Using hot water, dissolve your unflavored gelatin in a bowl.

2. Add in the vodka, Cointreau, citrus juice, and cranberry cocktail juice.

3. Place your molds on a pan to keep them level.

4. Pour mixture into your mini jelly cake molds (or desired molds) and refrigerate for at least 4 hours.

5. To remove the jelly cakes from their molds, it’s best to set the bottom of the mold into warm shallow water for 10-15 seconds.

6. Garnish with lime or lemon zest.
